Rum Balls

Another great recipe for Christmas

Ingredients

  • 20 shredded wheatmeal biscuits
  • 8 tsp cocoa
  • 150g ricotta cheese
  • 3 Tbsp unsweetened apple juice
  • 2 Tbsp brown rum
  • ½ tsp vanilla essence (optional)
  • 1 cup desiccated coconut

Preparation

Process biscuits in food processor or blender until they resemble fine crumbs
Add cocoa, ricotta cheese, apple juice, rum and vanilla and blend well
Spoon into a mixing bowl, cover and refrigerate overnight
Roll a small amount of mixture in coconut, place on a tray and refrigerate.
