Ingredients

100g Butter or Margarine

150g Caster Sugar

200g Self Raising Flour

2 Eggs (Beaten)

2 Large or 3 Medium very ripe bananas.

Heat the oven to 180c / Gas mark 4

Grease a 2lb loaf tin

Mash the bananas with a fork

Cream together the butter/Margarine and sugar, then mix in the eggs

Add the banana mix, then mix in the flour

Scrape into the tin and bake for 40 minutes then lower the temperature
to 150c / Gas mark 2 and cook for a further 30 minutes

Turn it out onto a rack and let it cool
